Pan Seared Chicken With Fresh Nectarines on a Potato Pancake

Ingredients

  • 4 chicken breast
  • Juice of 2 oranges
  • 1 cup soy sauce
  • ½ cup brown sugar
  • Pinch of cinnamon
  • 1 tbsp chopped ginger
  • 2 ripe nectarines
  • Watercress, lightly blanched

  Potato Pancake

  • 2 large potatoes
  • 1 tbsp parsley, chopped
  • 3 sage leaves, chopped
  • ¼ cup margarine, melted
  • 1 tbsp vegetable oil

  Simmer the orange juice, soy sauce, sugar, cinnamon, ginger and garlic over low heat until reduced by half and cool. Marinate the chicken breast for at least ½ an hour. Heat a large sauté pan with 2 tbsp of oil until hot. Add the chicken breasts and sauté for 5 minutes on each side. They should be nice and browned. Put on a plate and cover loosely with aluminum foil while you make the potato pancake. To serve, cut the nectarines into wedges and slice the chicken. Place the chicken on top of the potato cake and top with the nectarine and watercress. Drizzle with a little of the marinade.
