Spicy Orange Chicken Skewers with Apricot-Orange Dipping Sauce

 

Chicken Skewers

 

Ingredients

 

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp parsley
  • ½ tsp salt
  • ½ tsp orange zest
  • ¼ tsp red pepper flakes
  • ¼ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • 2 tbsp apricot preserves

 

Preparation

  Slice the chicken breast across the grain into ½ inch thick strips. In a large bowl, toss the chicken with the parsley, salt, orange zest, red pepper flakes, paprika, garlic powder and pepper. Add the apricot preserves, cover and marinate for 30 minutes.  

Dipping Sauce

 

Ingredients

 

  • ½ cup apricot preserves
  • 1 tbsp red wine vinegar
  • 1 ½ tsp parsley
  • ½ tsp orange zest
  • ¼ tsp salt
  • Pinch of red pepper flakes
  • Pinch of black pepper

 

Preparation

  Puree the apricot preserves and vinegar until smooth. Add the rest of the ingredients and let sit for ½ hour. Adjust the oven rack to the top position and heat the broiler. Line the broiler pan bottom with aluminum foil and top with the slotted top. Spray with nonstick cooking spray. Weave each piece of chicken onto individual bamboo skewer; lay the skewers on the broiler pan top and cover the skewer ends with foil, making sure not to cover the chicken. Broil until the meat is lightly browned and cooked through, 5 to 8 minutes, flipping the skewers over halfway through.
