- 1 box orzo pasta
- 1 red bell pepper diced
- 1 yellow bell pepper diced
- 1 cup sun dried tomatoes diced
- 3 cups julienned spinach leaves
- 2/3 cup red onion diced
- 1/2 cup feta cheese
- balsamic vinegar
- olive oil
Boil orzo pasta until fully cooked. Pour into strainer, and drain well. Add all the ingredients except the feta, balsamic, olive oil, and salt. Add cooked orzo pasta to bowl. Add about 1/4 cup olive oil. Add balsamic vinegar to taste while tossing all the ingredients in the bowl. Add salt to taste. Add the feta, and toss until all ingredients are combined. Enjoy fresh, or keep refrigerated for a nice side to lunch or dinner.
