- 1 (15 oz) can of garbanzo beans
- 1 (4 oz) jar of roasted red bell peppers
- 3 tbsp lemon juice
- 1 1/2 tbsp tahini
- 1 clove garlic
- 1/2 tsp cumin
- 1/2 tsp cayenne
- 1/4 tsp salt
Drain the liquid from the garbanzo beans into a bowl. Add all the ingredients into a food processor except the saved liquid. Pulse the food processor while adding a little bit of the liquid at a time. Continue pulsing the mixture until smooth. Add more liquid if the mixture isn’t mixing well, or it seems too thick. When the consistency is to your liking, scrape mixture into a bowl and enjoy with fresh baked pita chips, on a sandwich or as a veggie dip.
